芝麻釀茄子

1. 茄子洗淨去瓢後即用,否則需用保鮮紙包裹,以免變黑。
2. 如不喜歡茄子,可用青瓜代替,刨皮後釀上肉碎,味美爽脆,口感極佳。泰國雜貨店購買。

茄子------------2 個
免治豬肉--------300克
白芝麻----------2湯匙


[color=darkorange][b]製法:      [/b][/color]   
1. 茄子以清水洗淨,切去頭部及尾部,縱切為二,去瓢。
2. 免治豬肉攪碎,下醃料醃片刻。
3. 茄子內抹上生粉,釀肉碎填滿,然後灑上白芝麻。
4. 燒熱鑊,以慢火將兩面茄子煎至金黃色。
5. 盛於碟上,以大火蒸約10分鐘。滾芡汁,淋於茄子上即成。

雞粉--------------------1/2茶匙
鹽、生粉----------------各少許

清水-------------------3湯匙
鹽---------------------1/2茶匙
雞粉及糖---------------各少許
老抽-------------------適量
生粉-------------------2茶匙



STUFFED EGGPLANTS WITH SESAME

[color=darkorange]Ingredients:    [/color]     
eggplants 2
minced pork 300g
white sesame seeds 2 tbsp

[color=darkorange]Method:        [/color]
1. Wash eggplants. Cut off both ends. Cut into half horizontally. Remove the seeds and pith.
2. Process minced pork in blender and marinate.
3. Brush eggplants with caltrop starch. Stuff with pork and sprinkle with white sesame seeds.
4. Heat wok. Fry eggplants over low heat until both sides are golden.
5. Place eggplants onto plate. Steam over high heat for 10 mins. Bring sauce to the boil. Pour sauce over eggplants. Serve.

chicken powder 1.5tsp
salt, caltrop starch little/e

water 3 tbsp
salt 1/2 tsp
chicken powder, sugar little/e
dark soy sauce suitable amount
