茶香骨

主料:豬肋骨排640克
輔料:姜3片,干蔥肉粒,干蔥茸少許、紅茶包4包,生抽1湯匙、老抽1湯匙、八角3粒、檸檬皮1/8個
製作:
1)將肋骨排切成長條,洗掙抹乾水分,用干蔥茸和薑片醃片刻備用;
2)用1湯匙油爆香干蔥肉,倒入3杯水和調味料煮滾,放入肋骨排,用中火煮約7分鐘,熄火後再浸30分鐘,撈起瀝干備用;
3)用鑊燒滾3杯油,放入肋骨排炸至呈金黃色便成。
